They are baking now and smell amazing!
They are great for a quick breakfast or snack. These muffins are de-lish!
2 cups flour
4 tsp baking powder
2 tbs cinnamon
1 tsp nutmeg
2 tsp vanilla
4 tbs real maple syrup (or 1/2 a cup of sugar or 1/3 cup of agave)
1 cup oatmeal soaked in a water for a few mins (drain before adding)
1 1/2 cup apple juice
4 tbs coconut yogurt (totally optional)
1 apple peeled and chopped very small
carrot peeled and grated
Preheat oven to 325.
Mix all dry ingredients, then maple syrup, apple juice and oats then mix well. Add apple, carrot and yogurt last. Then use your non-dairy butter or regular butter to grease your muffin tins. Scoop even amount of mixture into tins and cook for 30-45 mins or check when browned.
