
Above was tonight's dinner and boy was it DE-LISH! Also completely Vegan!
Below is an open faced tosada I made for lunch. Totally Vegan! Thats our household theme right now.



We found out my mother-in-law has stage 4 Ovarian cancer last week. Which of course really really ..really sucks! But we are all taking a very positive out look and looking at how we can beat this. We read an article from the John Hopkins Medical Assosication and they explain how meat, dairy and sugar feed cancer. Then her Dr. comfirmed this theory and now together, we have all become Vegans! She will of course be doing Chemo and even some new medicine to go along with it. Meanwhile eating a very healthy all organic Vegan diet and drinking lots of green tea. All we can do is find a way to be cause and this is mine...cooking.
I think we are feeling better too and I personally feel like I have more energy.
So this week we have had:
Monday: Eggplant Parmesean with rice mozzerella and quinoa pasta & homemade sauce
Tuesday: sweet potatoe wild rice cakes with a spring salad and green beans and red potatoes.
Wedneday: Stuffed Zucchini shells with an Almond bread crumb filling & red pepper sauce (a tad too hot. I added almond milk to cool it down.), brown rice and spring salad.
Thursday: Sweetpotatoe & Eggplant baked with Rosemerry and Thyme (next time no Thyme) with Quinoa and a potatoe carrot and beet salad and a spring salad.
Friday: Falafal stuffed Pitas! Sprouts, lettuce, tomatoes, avacadoe, Falafal (of course!) and homemade Vegan Tzatziki sauce. We also had red bean soup on the side. Doesn't really go with the Greek theme but it tasted great!

Wow, those meals look and sound amazing! Yes, I would love to see your menus. I need new ideas all the time, especially healthy ones. So sorry to hear about your mother-in-law. Diet can be a huge help in beating cancer though, so good luck with all of this.
