While I'm going through this whole ordeal to handle my kidneys, we have switched back to a vegan diet. If you know anything about your kidneys you know that the best way to avoid further damage is too avoid harsh proteins or things that aren't completely used in your body. So we eat allot of veggies and fruits. Because we still need protein we include eggs and fish, which are very easy on the kidneys.
While switching back to this diet, I have spent more time in the kitchen then ever before. I actually really enjoy it. I take some great recipes that our family loves and find ways to make them vegan.
This morning was no exception and I was craving some yummy pancakes. I didn't want boxed pancakes and I had plans for my 6 eggs left. So I found this great recipe online.
1 cup flour (whichever kind you prefer)1 tablespoon sugar (I used honey and they could probably have used more.)2 tablespoons baking powder ( I only used 1 and they were the perfect texture.)1/8 teaspoon salt ( I didn't include salt because I can't have it)1 cup soymilk (I used almond milk)2 tablespoons vegetable oilI also added vanilla, cinnamon and nutmeg. When all done a topped with fresh fruit and organic maple syrup.

This is my finished product and I can happily say I ate all of them and may go back for more. So if you are short on eggs or just want to spice things up, give these a try and tell me what you think!
